ABOUT Dry & fresh fruit -vegetable mix pilaf RECIPE

A variety of fresh vegetables and fruits easily available in winter, and winter is the best time for eating spices, vegetables , fruits , sweets and so on. This is a simple pulao recipe with full of vegetables and fruits.

Ingredients Serving: 4

  1. Basmati rice 2 cups
  2. Bay leaf 1
  3. Cardamom green 2
  4. Cinnamon 2
  5. Clove 2
  6. Mace 1 petal
  7. Kaora essence 1 teaspoon( optional)
  8. Ghee and vegetable oil mix 3 tablespoon
  9. Sugar 1 tablespoon
  10. Salt as required
  11. Finely chopped ( sliced) carrots, cauliflower, French beans 1 cup
  12. Apple small diced 1 cup
  13. Casunut , almond, pistachios, walnuts, raisins, mix 1 cup
  14. 1 or 2 Orange peeled for garnishing

Instructions

  1. Wash rice and soak in water for 10 minutes
  2. Then cook the for about 15 minutes or it upto 80% done.
  3. Drain the excess water and keep aside. Don't cover it.
  4. Cook the chopped vegetables for 6-7 minutes with little salt . Drain excess water and keep aside.
  5. In a deep bottomed vessel heat oil and ghee mix.
  6. Add dry fruits mix and fry lightly, then remove from oil and keep aside.
  7. In the same oil and ghee mix add bay leaf, cardamom, cinnamon, cloves and mace.
  8. Let it splutter and and cooked vegetable mix. Stir.
  9. After few minutes when fried aroma comes out add cooked rice.
  10. Stir and mix. Add sugar and salt. Mix well.
  11. Add apples and dry fruits. Mix properly.
  12. After few minutes sprinkle kaora essence. And cover with a lid.
  13. Remove from heat. And let it rest for 10 minutes
  14. Remove cover, spread it on a rice plate and garnish with oranges.
  15. Serve with your favourite veg or non veg sides.
