ABOUT Mix Vegetable Pizza RECIPE

This dish is totally homemade from scratch, the base is made from wheat flour but without yeast and this makes it a very healthy option.

Ingredients Serving: 5

  1. Bread Ingredients-
  2. Wheat flour 3 cups
  3. 3 tbsp olive oil
  4. Salt to taste
  5. 2 tbsp baking powder
  6. Water as required
  7. Tomato Sauce Ingredients:
  8. 3 tbsp olive oil
  9. 2 big Bay leaves
  10. 3 tbsp garlic finely chopped
  11. 2 tsp sugar
  12. Salt to taste
  13. 1 tsp Italian mix spices of rosemary and thyme
  14. 2 tbsp each of oregano
  15. 2 tbsp chilly flakes
  16. 2 tbsp pepper powder
  17. 200 ml tomato puree
  18. 3 tbsp tomato ketchup
  19. 6 tomatoes, finely chopped
  20. 1 small onion, finely chopped,
  21. 1 small capsicum, finely chopped,
  22. TOPPINGS- Diced Onions,capsicum, sliced tomatoes, baby corn, American sweet corn kernels, mushrooms, olives, jalapeño, grated mozzarella cheese and olive oil to drizzle. Italian herbs to sprinkle.

Instructions

  1. For the Dough:- Start by mixing all the dry ingredients ingredients. Add 2 tbsp oil ( keep aside 1 tbsp oil for later) and mix well. then add water to knead into a smooth and pliable dough. It should be soft and loose, but shouldn't be sticky. If it sticks than add more oil.
  2. Once done, oil the dough with the remaining 1 tbsp oil. Cover it in an air tight box, and keep it aside for 2 hours in a warm place.
  3. To make the the tomato sauce, take a pan and heat in some oil. Toss the garlic, bay leaves, cloves, onion, till it turns pink in colour.
  4. Saute the capsicum then glaze it. Add in the finely chopped tomatoes. Mix well while adding all the dry ingredients. Add tomato puree. Cook by covering till it is mixed well and in a semi liquid state.
  5. Finally add the ketchup and mix well. Cook till this is uniformly blend into a sauce consistency. Keep it aside to cool.
  6. Greasing a rolling pin and rolling board, take the dough again and knead into a tennis sized ball. It should be soft, smooth without any crack lines. Roll out into 12 inch or as per size of baking round tray 1/4 inch thick uniformly from all sides.
  7. Preheat the oven to 200 degree Celsius.
  8. Grease the tray. Bake a rolled dough base for 10 minutes.
  9. Once done, quickly top it with all the diced toppings. Sprinkle some Italian spice powder and cover it with grated cheese.
  10. Once again bake it for 7 minutes approximately. If you want it totally crispy, bake it further for 5 minutes more.
  11. Cut in pieces and serve hot to enjoy!
