ABOUT Kerala Beef Fry RECIPE

This Syrian Christian specialty is found on every street corner in Kerala. Bits of coconut and lots of curry leaves is what gives it that intense flavour

Ingredients Serving: 4

  1. For the marination: 1 tsp ginger garlic paste
  2. 500 grams of meat of your choice
  3. Juice of 1 lemon
  4. 2 tbsp chopped onions
  5. 1tsp coriander powder
  6. 1 tsp red chilli powder
  7. 1 tblsp fennel seeds, lightly roasted and pounded)
  8. ½ tsp turmeric powder
  9. 1 inch piece cinnamon
  10. 4 cloves
  11. 2 stalks curry leaves
  12. 1 star anise
  13. Salt to taste
  14. For the tempering: ½ cup of fresh coconut sliced into bite size piece
  15. 3 tblsp coconut oil
  16. 1 onion sliced
  17. 2 green chillies split lenghtwise

Instructions

  1. 1. In a large bowl add all the ingredients for the marination along with the meat of your choice and set it aside for half an hour.
  2. 2. In a pressure cooker, tip the marinated meat and pressure cook gently for about 20 minutes or until the meat has softened. You don’t need to add water, as the meat will release its juices in any case.
  3. 3. Once the meat has cooled down, get ready to fry it.
  4. 4. Heat a sauce pan with oil and add the onion, chillies and the curry leaves to it. Once the onions turn golden, add all the meat and turn down the heat. Add the coconut slices and let it cook until the meat changes colour and begins to stick to the pan.
  5. 5. Serve hot with Malabar parotta or appam.
