In India we usually use cauliflower in making sabji, especially mix veg, pav bhaji, pulao, stuff parantha, pakoras, etc. But I decided to make a dessert out of it. Cauliflower kheer is made by sauteeing cauliflower to remove its typical odour and then cooked in milk.
I will surely try this.

Heat the milk and bring it to a boil. Lower the flame & let it simmer.
In a small bowl take 4 tbsp of the boiled milk and add corn flour to it. Mix & keep aside.
In a broad pan, add desi ghee. Add cardamom pods & saute for 30 seconds.
Next add the grated cauliflower and saute on high flame for 3 minutes, stirring continuously.
Now add the milk and let it cook on a medium flame until the cauliflower is soft & mushy.
Now add the sugar and boil the kheer until the sugar dissolves.
Add the nutmeg powder & corn flour mix with milk. Stir continuously so as no lumps remain
Let it cool completely. Garnish with chopped pistachios & Serve
