ABOUT Steamed Quail in Gravy(Malabar style) RECIPE

This is a tasty and delicioius non-vegeterian meal served with ghee rice or rice roti. It is indeed a substitue for chicken and healthy too as it has low cholestrol content. It can be served with rotis, naan, appam.

Ingredients Serving: 2

  1. Kaada/Quail 2 nos
  2. Ginger garlic paste - 2 tsp
  3. Green chilly - 3
  4. Kasmiri red chilly powder- 2 tsp
  5. Pepper powder - 1 tsp
  6. Turmeric Powder-1/4 tsp
  7. Garam masala-1/2 tsp
  8. Lemon juice - 1tsp
  9. Salt to taste
  10. Water -2 tbsp
  11. Oil -2 tbsp
  12. Dal (cooked) -1/4 cup
  13. Onion - 4 medium
  14. Tomato - 3 small
  15. Coconut - 1/2 cup
  16. Cumin seeds - 1/2 tsp
  17. ChIily whole round- 2
  18. curry leaves

Instructions

  1. Clean and cut the quail and make slits on the meat with a knife.
  2. Marinate the meat with the dry powders made into a paste with water and salt, (kashmiri chilly powder, turmeric powder, garam masala, pepper,lemon juice.) Keep it saide for 2hrs.
  3. Heat oil in a pan and saute onions until golden brown.
  4. Add curry leaves followed by ginger garlic paste and saute for another 2mins. Now add chopped green chillies.
  5. Add chopped tomatoes and cook till mashed.
  6. Add the cooked Dal and also the marinated chicken to this. Cook for 20 minutes in low flame.
  7. Roast coconut, whole round chillies , cumin seeds and grind into fine paste. Add to the chicken gravy and simmer it for another 5 minutes.
  8. Garnish and serve hot.
