ABOUT Quail egg gravy RECIPE

This spicy, thick gravy is usually prepared in most tamil homes

Ingredients Serving: 4

  1. 10 quail eggs
  2. 1 Onion, chopped
  3. few curry leaves
  4. 5 green chilly
  5. 1 tablespoon ginger garlic paste
  6. 1 Tomato, chopped
  7. 1/4 teaspoon turmeric powder
  8. 1/2 teaspoon red chilly powder
  9. 1/2 teaspoon cumin powdee
  10. 1/2 teaspoon coriander powder
  11. Salt to taste
  12. To Roast & Grind
  13. 3 clove
  14. 1 star anise
  15. 1 cardamom
  16. 1 small cinnamon stick
  17. 1/4 teaspoon cumin seeds
  18. 1/4 teaspoon fennel seeds
  19. 1/4 teaspoon Coriander seeds
  20. 1 bay leaf
  21. 1/2 teaspoon black peppercorns
  22. SECOND SET
  23. 1 sliced onion
  24. 1 chopped tomato
  25. oil

Instructions

  1. Hard boil the quail eggs. Remove the shells and slit slightly on the sides to make sure the masala can get into the egg.
  2. Heat a pan and add all the whole spices. Roast for a min. Transfer to a blender.
  3. Then heat oil. Add onion and tomato, saute and transfer to blender.
  4. Blend well with spices and make to smooth paste. Set aside
  5. In same pan, add oil. Add chopped onion, curry leaves and green chillies.
  6. Now ginger garlic paste and salt goes in. Then add tomato and mash well.
  7. Add turmeric powder, red chilly powder, cumin powder, coriander powder and cook for a min.
  8. Now add blended paste. Sprinkle little water.
  9. When oil oozes out from sides, add eggs. Mix and close pan.
  10. Switch off. Garnish with coriander leaves and serve hot with rice.
