ABOUT Bittergourd Masala RECIPE

It is little tricky to make someone eat bittergourd eapecially if the person is too fussy about it.. but at the same time there are few people even in the same family who would love to eat bittergourd in whichever way it is made. So to satisfy all, this recipe is a solution which will work wonders for all kind of tastebuds.

Ingredients Serving: 2

  1. Bittergourd 250gm
  2. onion 1 big
  3. Ginger Garlic Paste 3 teaspoon
  4. Turmeric powder 1/2 teaspoon
  5. Red chilly powder 1 teaspoon
  6. Garam masala 1 teaspoon
  7. Tamarind 2 inch piece
  8. Jaggery 1 tablespoon
  9. Sesame seeds 2 tablespoon (black and white both or either)
  10. Grated dry coconut 1 tablespoon
  11. Methi seeds 1 teaspoon
  12. Cumin seeds 2 teaspoon
  13. peanuts 1 tablespoon
  14. Roasted chana dal/ daliya 1 tablespoon
  15. Ajwain/ caraway seeds 2 teaspoon
  16. Badishep/ Sounf 1 teaspoon
  17. Kalounji 1 teaspoon
  18. Flax Seeds 1 Teaspoon
  19. Salt to taste
  20. Oil 2 tablespoon

Instructions

  1. Clean and cut bittergourd in small pieces. Rub salt on them and keep for 15 minutes
  2. Meanwhile, in a grinder, make a paste with onion, ginger garlic paste, red chilly powder, garam masala and turmeric powder
  3. Take out this paste in another separate bowl
  4. Now take all other ingredients
  5. Roast them all one by one(except jaggery and tamarind) and mix together.
  6. Now make powder with these ingredients. Add jaggery and tamarind also to it while grinding
  7. Meanwhile wash and drain bittergourd which we kept for soaking in salt
  8. Heat oil in pan
  9. Add bittergourd in oil
  10. Cook them till they turn a little golden and shrink in size
  11. Add onion paste now and cook till raw flavour goes.
  12. Mix well
  13. Now add masala powder which we ground earlier
  14. Add salt. Mix well and cook covered for 5 minutes
  15. Let it cook till bittergourd is fork tender and masala dries up
  16. Remove from gas and serve. This preparation tastes better next day when flavours of spices get absorbed well in bittergourd. This can be kept for 5-6 days in refrigerator.
