Ingredients Serving: 6
Bittergourd -400gm
Sugar free potatoes -5-6 nos.
Onions -5-6
Oil for frying
Salt to taste and for coating bittergourd nicely to squeeze out bitterness
Redchilly powder-1 tsp
Green chilly 3-4
Turmeric powder -1/2tsp
Anardaana /aamchurpowder -1-1/2tsp
Garam masala -1tsp
Instructions
Wash bittergourd with running water scrap the peels make aslit in each bittergourd coat salt nicely in side bittergourd and peels keep it under sunlight for 15 minutes.
Meanwhile cut potatoes in small pieces and onions into juliennee.
Deep fry potato pieces in hot oil afterward simmer the flame turn the sides of potato pieces till nice golden brown and gets tender also take them out on paper towel.
While keeping it in sunlight bitterness goes off but wash bittergourd and peels nicely under running water to get rid of excess salt .
Squeeze out excess water and deep fry bittergourd after potatoes done on simmer flame till nicely crispy brown turn the sides take them out on paper towel.
In a wok add oil then add squeezed peels of bittergourd fry it till crispy
Add onion julienne roast till crispy brown .
Add all spices except annardaana stir it well.
Add fried potatoes ,fried bittergourd mix it well in spices add 2tbls water and cover the lid for few minutes on low flame ,finally add annardaana /aamchur powder stir it well ad garam masala .
Spicy tangy bittergourd is ready to serve with raita or daal etc.
