Scrape the bitter gourd sprinkle some salt and keep in sunlight 10 minutes
Wash & dry them.
In a bowl mix salt & all dry masalas
Slit the bittergourd in the middle
Fill the masala & keep aside.
Heat oil.
Fry the potato fingers & keep aside.
Now put the bittergourd in the oil and cook until it becomes brown all the sides.
Remove from the oil.
Put onion julliennes in the oil
Put green chillies
Add fried potatoes
Sprinkle left over masala
Add bitter gourd
Stir well
Cover & cook on simmer till 5 minutes.
Open & roast properly
Serve.with chapati.
