Ingredients Serving: 4

  1. Besani Aloo Dal:
  2. 4 big potatoes
  3. 4 tbsp Gram flour
  4. 2 tomato puree
  5. 1/2 cup chopped coriander leaves
  6. 1 tbsp Cumin seeds
  7. 1 Tbsp turmeric
  8. A pinch of asafoetida
  9. 1 tbsp Degi Mirch powder
  10. Salt and red pepper as per the taste
  11. 2 Dried red chillies
  12. 4 tbsp ghee
  13. Water as per the requirement
  14. Masala Sooji Poori :
  15. Oil for deep fry + Oil for dough
  16. 2 cup suji
  17. 1 cup maida
  18. 1 tsp Salt
  19. 1/4 tsp cumin seeds
  20. 2 green chilies
  21. 1tbsp dried and churned Mint leaves
  22. 1 tbsp chopped coriander leaves
  23. Water as per the requirement

Instructions

  1. Boil the Potatoes and let them cool down
  2. For Masala Pooris:
  3. Meanwhile Mix Suji , Maida
  4. Add salt , cumin seeds
  5. Now add coriander leaves and mint leaves
  6. Add chopped green chilies
  7. Add Turmeric powder and 1 Tbsp oil
  8. Start kneading the dough with the help of water
  9. Add water in batches and make a firm dough like Regular pooris
  10. Rest it for 20 minutes
  11. For Besani Aloo Dal :
  12. Peel and grate the boiled potatoes
  13. Heat oil for sauté and add cumin seeds
  14. Let them crackle and add asafoetida
  15. Now add turmeric powder and Degi Mirch powder
  16. Now add gram flour on low flame for 2 minutes
  17. Now add Degi Mirch powder and sauté
  18. Add tomato purée and chopped green chilies
  19. Sauté for 2 minutes
  20. Now add the grated potatoes and salt
  21. Mix it well and now add water in such a quantity so that it would be like Dal like consistency
  22. Close the lid and bring it to two whistles
  23. Slow down the flame and add chopped coriander leaves
  24. Now cook for another 5 minutes on low flame
  25. Take another wok and add 1 tbsp ghee
  26. Add Degi Mirch powder and dried chilies for a tadka
  27. Now Pour this tadka over the Dal
  28. Your Besani Aloo Dal is ready to rock
  29. For Masala Pooris :
  30. knead the dough again and divide it into 20 equal sized balls
  31. Roll out the balls one by one, shapes like a Poori
  32. Add oil for deep fry in a kadhai
  33. Drop the pooris and let them cook
  34. Repeat the procedure for every balls
  35. Masala Pooris are ready to serve and ready to eat
