This is a recipe from Egypt i.e. Mediterranean cuisine and this is regarded as the national dish of Egypt.It is available in every restaurant in Egypt and local vendors also sell koshari like v get golgappe here. KOSHARI is derived from Indian word khicri and this dish can be called as videshi khichri.It makes a complete wholesome meal.

Dry roast everything for masala separately and make a fine powder.Keep aside .
Take oil in a wok. Fry onions till crisp like birista which we make for biryani.
Remove in a bowl.
In the same wok add cumin seeds and bayleaves. Add soaked rice,water and salt.Cook till rice are done .
Keep the rice aside .
For sauce,heat oil in a pan.
Add onions and roast. Add tomato puree and roast.
Add salt and masala we prepared in step 1 according to your taste. Add red chilli powder for more spice.
Now for assembling KOSHARI, mix red lentils and macaroni with cooked rice.
Take this mixture in a plate and top with the sauce we prepared.
Sprinkle masala that we already prepared in step 1 .
Finally garnish with boiled chickpeas and fried onions.
Relish the Mediterranean delicacy at your home.
