ABOUT Koshari...(Egyptian rice,lentils and macaroni one pot meal) RECIPE

Middle Eastern food is phenomenal. It has got such a variety of dishes. Koshari is the national dish of Egypt. It is basically a combination of rice, lentils, chickpeas and macaroni with spicy chilli garlic sauce. The spice blend Baharat used in this lends a unique taste and flavour to this dish. Infact just a little of it adds depth and flavour to soups, stews, sauces, grains, vegetables and meat. Thus it's referred to as a magical blend. It's a mindblowing one pot meal with so many nutrients at one go. One can use any shape of macaroni and spaghetti in this. Infact 1 or 2 or more varieties of these can be used. Ingredients Serving: 6

  1. Chickpeas 1 cup soaked
  2. Rice good quality 1 cup soaked
  3. Whole masoor dal or brown lentils 1 cup
  4. Macaroni 1 cup boiled
  5. Spaghetti 1 cup boiled
  6. Salt to taste
  7. Vegetable stock 2 cups
  8. Bay leaves 2
  9. Cumin seeds 1 tsp
  10. Garlic sliced thinly 2 cloves
  11. Olive oil 1 tbsp
  12. Onions large sliced thinly 2 deep fried
  13. FOR THE SAUCE...
  14. Olive oil 3 tbsp
  15. Tomato paste 1 cup
  16. Garlic mince 2 tbsp
  17. Baharat spice blend 1 tbsp
  18. Salt to taste
  19. Red chilli flakes 1 tbsp
  20. FOR THE BAHARAT SPICE BLEND...
  21. Peppercorns 2 tbsp
  22. coriander seeds 2 tbsp
  23. cumin seeds 2 tbsp
  24. Cinnamon sticks 6 to 7
  25. Paprika 1 tbsp
  26. Nutmeg 1 tsp

Instructions

  1. First of all prepare the baharat spice blend by roasting all the spices on a low flame for a minute or two.
  2. Blend all and store it in an airtight jar.
  3. FOR THE RICE...
  4. In a saucepan add olive oil about a tbsp and throw in some cumin seeds.
  5. After a few seconds, add the bay leaves and stir in the soaked rice.
  6. Soak the rice for atleast 20 minutes.
  7. Next saute the sliced garlic.
  8. Stir in the rice now.
  9. Add 2 cups of vegetable stock and let it simmer until done.
  10. Adjust the salt accordingly.
  11. Pressure cook the chickpeas and set aside.
  12. Boil the whole masoor dal or brown lentils too until done.
  13. Boil the macaroni and the spaghetti according to the package instructions until al dente.
  14. FOR THE SAUCE....
  15. In a pan, heat 3 tbsp of olive oil.
  16. Add the garlic and the chilli flakes.
  17. Saute for a minute.
  18. Add the baharat spice blend about 1 tbsp.
  19. Next add the tomato paste.
  20. Let it simmer for 3 to 4 minutes.
  21. Add salt accordingly.
  22. Deep fry the sliced onions and set aside.
  23. ASSEMBLING THE KOSHARI....
  24. Mix the cooked rice, lentils, chickpeas and macaroni well with proper care.
  25. Pour the chilli garlic sauce on top.
  26. Garnish with crispy fried onions generously.
  27. Yummylicious one pot meal Koshari is ready to devour.
