For Tahini Spread:
1/2 cup white sesame seeds
1/2 cup hung curd
2 tbsp olive oil
3-4 cloves of Garlic
6-8 basil leaves
Salt to taste
For the sandwich:
1 finely chopped cucumber
1 big cup of finely chopped all color bell peppers (yellow, red and green)
1/4 th cup boiled sweet corn
2-3 spring onion chopped (both white and green)
1/2 cup mayonnaise
2 tbsp tomato ketchup
2 tsp pepper powder
Salt to taste
8-10 pita pockets
2 tbsp Butter
Instructions
For tahini spread Dry roast white sesame seeds for 2 mins. Let it cool. Now grind the sesame seeds with remaining ingredients for the spread into a smooth paste. Keep aside.
For the filling Mix all the chopped veggies together. Mix mayonnaise and tomato ketchup in a separate bowl.
Add salt and pepper powder and mix well. Now add the mayonnaise mixture to the veggies and mix well.
For the pockets Once the pockets are cut in half open then with help of a knife. Now heat a non stick pan and grease it with a little butter.
Now roast the pockets on the pan from both sides till little crispy. Remove the pockets from the pan. Now apply a generous amount of tahini spread to it. Place a small piece of lettuce on it.
Then fill the pockets with the veggie filling. Serve immediately with some ketchup.
