ABOUT Doodhpak/ Milk and Rice Pudding RECIPE

Doodhpak is a tasty and creamy dessert prepared by Konkani community during festivals and auspicious occasions. It literally means milk sweet syrup. It is basically a delicious and aromatic concoction made by slowly simmering the milk with rice, sugar and cardamom powder to form a creamy rich treat packed with all dairy goodness.

Ingredients Serving: 4

  1. Milk 8 cups, divided
  2. Basmati Rice 6 tablespoon
  3. Water 1 cup
  4. Sugar 1 cup
  5. Cardamom powder 1/2 teaspoon
  6. Ghee 1 teaspoon
  7. Fistful of raisins
  8. Fistful of broken cashews

Instructions

  1. Wash the rice clean and soak it in enough water for 30 minutes.
  2. Drain the water after 30 minutes.
  3. Then put it in pressure cooker vessel, add 1 cup milk + 1 cup water and cook it for 3 whistles.
  4. Meanwhile, roast raisins and cashews in 1 teaspoon ghee and keep it aside.
  5. Heat remaining 7 cups milk in a thick bottomed vessel and bring it to a boil.
  6. Continue cooking and stirring frequently.
  7. When the milk is reduced to half, add cooked rice and continue cooking for 10 minutes on low flame.
  8. Next add 1 cup sugar and cook until it dissolves.
  9. Add cardamom powder, roasted raisins, and cashews. Mix it well.
  10. Serve it hot, warm or chilled garnished with roasted raisins and cashews.
