Barnyard Millet pudding or samvat rice kheer is a healthy and tasty dessert which is quite easy to make and digest and off course a big help to change your taste.

Ingredients Serving: 4

  1. 1/3 cup barnyard millet
  2. 3 cups full cream milk
  3. 50 gram cashews (chopped)
  4. 1/3 cup sugar
  5. 1/8 teaspoon green cardamom powder
  6. 50 grams almonds (chopped) You can add or remove dry fruits as per your choice

Instructions

  1. Soak the samvat rice in a cup of water for an hour. Drain and keep aside.
  2. Heat the milk on a medium flame.
  3. When the milk begins to boil, add the soaked samvat rice to the pan, and stir well.
  4. Cover the pan and reduce the flame.
  5. Allow the mixture to simmer for twenty minutes, stirring occasionally.
  6. After twenty minutes, add sugar and cook till the sugar has fully dissolved.
  7. Add the cashew nuts, chopped almonds and cardamom powder.
  8. Cook for another ten minutes, then remove it from the stove and garnish with chopped nuts. Serve warm or chilled as per your choice.
