Ingredients Serving: 4

  1. Spinach leaves 16
  2. Besan 2 tablespoon
  3. Hing a pinch
  4. Salt to taste
  5. Red Chilli Powder 1/2 teaspoon
  6. Rice flour 1 tablespoon
  7. Baking soda 1/2 teaspoon
  8. Oil for frying
  9. For Garnishing:
  10. Pomegranate seeds
  11. Coriander chutney
  12. Meethi chutney
  13. Sev
  14. Beaten curd
  15. Coriander leaves
  16. Thinly sliced beetroot

Instructions

  1. Thoroughly wash spinach leaves.
  2. Take a bowl,add besan, hing, ajwain, salt, red chilli powder, rice flour and water. Form a smooth batter.
  3. Add baking soda and mix.
  4. Heat oil in a wok for deep frying.
  5. Now add spinach leaves in batter one at a time. Evenly coat the batter.
  6. Semi fry all the leaves.
  7. Fry the leaves again at the time of serving, so that leaves will be fully fried and crispy.
  8. Garnish with meethi chutney, coriander chutney, beaten curd, pomegranate seeds, chopped coriander leaves, beetroots and sev.
