ABOUT Paticha Pithala/ Spring onion with gram flour RECIPE

Pithala is a very famous dish in interiors of maharashtra. Pithala is enjoyed with bhakari/ chapati or rice in dinner. It is very simple and quick dish. There are various ways and preparations in which pithala is made in different regions of Maharashtra. This recipie elicits pithala with spring onion and buttermilk.

Ingredients Serving: 3

  1. Buttermilk 1 cup
  2. Gram flour 2 cups
  3. Spring onion with bulbs 1/2 bunch
  4. Turmeric powder 1/2 teaspoon
  5. Oil 1 teaspoon
  6. green chillies 3
  7. Curry leaves 6-7
  8. Tomato 1 (optional)
  9. Ginger Garlic paste 2 teaspoon
  10. Tempering: cumin and mustard seeds, asafotida
  11. Salt to taste

Instructions

  1. Take buttermilk in a vessel and add gram flour to it.
  2. Make a fine paste of gram flour. Add water as required. Add salt at this time to mix it well with flour.
  3. Do not leave any lumps of flour in mixture
  4. Cut spring onion green and bulbs
  5. Heat oil in vessel. Add tempering and curry leaves
  6. Add spring onion bulbs and saute till onions are soft
  7. Make a fine paste on tomato, green chillies and ginger garlic
  8. Add this paste and green spring onion to oil and saute well
  9. Mix turmeric in gram flour mixture
  10. Add gram flour mixture to onion and tomato paste and quickly mix together
  11. Keep on stirring with flame on so as to not form any lumps of flour
  12. As the mixture gets heated, it thickens. Keep on stirring till it forms a lump and flour gets cooked
  13. Once the lump is formed, swich off the flame and cover and let it sit for 5 minutes
  14. Serve warm with bhakari or rice
