Ingredients Serving: 5

  1. The flour mixture :
  2. APF - 1 1/2 cup
  3. Wheat Flour - 1 Cup
  4. Baking powder - 2 tsps
  5. Salt - 1/2 tsp
  6. The caramelized onion mixture :
  7. medium sized onions - 3
  8. Spinach - 2 cups
  9. Garlic minced - 1 tsp
  10. Salt - 1/2 tsp
  11. Oil - 2 tsps
  12. The wet mixture :
  13. Eggs - 2
  14. Milk - 3/4 cup
  15. Oil - 2/3 cup
  16. Crumbled cottage cheese - 3 tbsps

Instructions

  1. Seive the flours with the ingredients mentioned in flour mixture and keep aside
  2. Take a pan, add 2 tsp oil and add the sliced onions, sprinkle the salt, saute till evenly browned. Then add the minced garlic and saute further
  3. Blanch spinach and strain and add to the onion mixture and saute further till wilted, for a minute approximately.
  4. Now keep aside
  5. Beat two eggs
  6. Add the milk and beat further
  7. Add the oil and beat again till ingredients are mixed well
  8. Now keep all ingredients ready for the final assembling
  9. Preheat the oven to 200 degrees
  10. Spoon in the flour into the egg mixture
  11. Then goes the caramelized onion spinach mixture
  12. And finally add the crumbled cottage cheese
  13. Take a loaf pan and grease well with oil and dust with the flour. Spoon in the batter
  14. Heres the ready pan
  15. Goes straight into the preheated oven but at a reduced temperature of 160 degrees for 35 to 40 minutes
  16. Heres the ready loaf, hot out of the oven
  17. Wait for a couple of minutes and demould loosening the sides first
