ABOUT Caramelised Onion Uttappam.... RECIPE

A classic breakfast recipe from South India. This is a permanent feature in many a houses down south. Not only that, this is equally famous all over India. That is the speciality of Indian food. No matter where it comes from, people from all the different cultures, traditions and religions enjoy it. India is therefore a treasure house of varied cuisines and vast food culture.

Ingredients Serving: 4

  1. Raw rice 2 cups
  2. Black gram or urad dal 3/4th cup
  3. Salt 1 tsp
  4. Fenugreek seeds 1 tsp
  5. Bengal gram or chana dal 2 tbsp
  6. Onion sliced 3
  7. Green chillies chopped 3
  8. Capsicum thinly sliced 2
  9. Tomatoes thinly sliced 2

Instructions

  1. Soak rice and dal separately for 4 hours.
  2. Add fenugreek and bengal gram dal to the urad dal while soaking.
  3. Grind them separately.
  4. The batter should be a smooth one of flowing consistency.
  5. Leave it to ferment overnight.
  6. Heat an iron griddle or tawa.
  7. Pour a big ladleful of the batter and do not spread much.
  8. It should be a little thick one only
  9. Add onion, capsicum and tomato slices along with finely chopped chillies.
  10. Onions must be more and capsicum and tomato slices can be according to your choice.
  11. I added just about two slices each on every uttappam.
  12. You can very well skip it.
  13. Cover it and cook for 2 to 3 minutes on each side.
  14. I prefer a little bit caramelised onions, so i roasted a little long.
  15. But you can do it according to your family's liking.
  16. Serve it hot with coconut chutney and tomato onion chutney and sambar.
