ABOUT Caramelized Onion & Berry Pulao RECIPE

This is simple, easy but tasty brown rice with onion and topped with berries and pistachios with a little hint of sugar. Inspired from Parsi cooking, this is a perfect accompaniment to dhansak or any other spicy curry.

Ingredients Serving: 2

  1. Ghee 2 tablespoon
  2. onion 1 big
  3. Sugar 3 teaspoon
  4. Basmati rice 2 cups. Soaked for 1 hour
  5. Cranberries handful
  6. Pistachios 10-12
  7. Saffron strands 1 pinch
  8. Salt to taste

Instructions

  1. Heat 1 tablespoon ghee in a wide vessel
  2. Cut onion long and fry them in ghee
  3. Let the onions caramelise and get crispy
  4. Take out a few of them for garnishing later
  5. Now till the rest pf onion are getting brown, add sugar in the pan keeping onion on one side
  6. Wait for sugar to caramelise. Here I have used the same pan to fry onion as well as to caramelise sugar. You can also caramelise sugar in other pan and transfer to onions.
  7. Sugar will become brownish after heating. Mix it well with onions
  8. Add soaked rice
  9. Add salt and water (2cups). Mix well
  10. Let rice cook till fluffy and soft.
  11. While rice is cooking, in another pan heat one tablespoon ghee.
  12. Slightly roast chopped cranberries and pistachios
  13. Add nutmeg powder and saffron once you switch off flame
  14. Top this cranberry mixture over cooked rice while serving
  15. Serve rice with spicy curry or dhansak or pan seared chicken and tomato gravy
