while writing this post, i still remember the flavour and taste of this baby onions masala gravy. it was damn good.

Ingredients Serving: 4

  1. for the roasted onions we will require
  2. 5 to 6 baby onions
  3. 1/2 teaspoon red chilli powder
  4. 1/2 teaspoon aamchur powder( dry mango powder)
  5. 1/2 coriander powder
  6. 1/2 garam massala ( blend ground spices)
  7. Salt to taste
  8. 4 tablespoons oil
  9. ingredients for a tangy gravy
  10. 2 medium size onions finely chopped
  11. 3 medium size tomatoes finely chopped
  12. 1/2 tablespoon ginger and garlic paste
  13. 1/2 teaspoon cumin seeds
  14. 2 green chilli
  15. 4 tablespoon thick yogurt
  16. 1/2 teaspoon red chilli powder,
  17. 1/2 teaspoon Turmeric powder
  18. Salt to taste
  19. 1/2 teaspoon garam massala
  20. 1/4 cup oil

Instructions

  1. so first we will cook onions
  2. Choose Baby onions usually smaller in size. Wash them and peel their skin Make a cross section insertion on top using a sharp knife. Make sure the cut does not cut the onions into pieces.
  3. In a bowl mix Salt, Turmeric powder, Red Chili powder. Also add to this Amchur, Coriander powder, and Garam Masala. Mix the spices well and stuff them with help of spoon.
  4. Heat the 4 to 5 tablespoon oil in pan and add stuffed onions and carefully toss them to coat them with oil Saute for a minute or two. Keep tossing and turning in between and cook for 10 minutes on medium high heat or until the onions looks golden brown.. Switch off the flame and keep aside
  5. now the next step for tangy gravy
  6. Chop the onion and tomatoes finely. Cut the green chillies lengthwise
  7. Heat oil in a pan, add the green chillies and saute for a minute add cumin seeds along with chopped onions, turmeric powder Red chilli ,salt to taste and mix well.
  8. Finally, add the chopped tomatoes ginger, garlic paste , yogurt and allow it to cook on a low flame.
  9. Without adding water, grind or blend to a smooth paste. gravy is thick in consistency. If needed you can also add a cup of water and bring it to boil.
  10. when it done remove and place them in a plate or tray. Then keep the roasted onions on a top And serve hot with chapatis , rice .. And enjoy this Sindhi , Stuffed massala onions with tangy gravy...
