ABOUT Arbi Dum RECIPE

Idea from a very popular version of Aloo Dum. It is a very simpler recipe made with a few ingredients. Idea courtesy Shimpa Rathore's Alu Dum.

Ingredients Serving: 2

  1. Arbi(Colocasia) 4 big size
  2. Tomatoes 3-4 medium size
  3. Whole dry Kashmiri red chillies 5-6
  4. Garlic cloves 4-5 small
  5. Nigella seeds (kalonji) 1 teaspoon
  6. Turmeric powder 1/4 teaspoon
  7. Cumin powder 1/2 teaspoon
  8. Salt to taste
  9. Oil for frying
  10. Mustard oil /or any other oil 2 tablespoons

Instructions

  1. Pressure cook Arbi for one whistle with sufficient water.
  2. Soak the dry chillies in hot water for 10 mins.
  3. Manually remove the pressure (whistle) carefully otherwise Arbi will be overcooked.
  4. Peel Arbi and cut into small round pieces.
  5. Heat oil and deep fry it.
  6. Fry pieces till golden brown in colour and transfer into kitchen tissues.
  7. Blanch tomatoes and peel them.
  8. Grind the soaked chillies, peeled garlic cloves and blanched tomatoes to a fine puree.
  9. Heat mustard oil, add nigella seeds.
  10. Once fragrant add the tomato puree.
  11. In a couple of minutes add turmeric, cumin powder and salt.
  12. Stir and add fried pieces.
  13. Simmer for 8 to 10 minutes on medium heat to form a velvety gravy.
  14. It is ready to serve
