ABOUT Marinara Sauce RECIPE

This is the sauce which can be used in pizza, pasta and almost all kinds of Italian dishes. The colour of the sauce is so natural. It has got all the flavours in it like sweet, tangy, spicy and salty. One can prepare this and store in an airtight container up to a week or freeze it for months

Ingredients Serving: 4

  1. 6 to 7 fresh tomatoes
  2. 2 teaspoons Olive Oil
  3. 2 tablespoons very finely chopped garlic
  4. 2 tablespoons onions chopped
  5. 2 tablespoons red capsicum very finely chopped
  6. Salt to taste
  7. 1 tablespoon sugar
  8. 1 tablespoon pepper crushed
  9. 1/4 cup fresh basil, very finely chopped
  10. 1 teaspoon mixed Italian spices (marjoram, Oregano, thyme etc)

Instructions

  1. In a huge pot, bring water to boil.
  2. Make slits on tomatoes.
  3. Once it comes to rolling boil, add tomatoes.
  4. Cover and keep for 5 minutes.
  5. Take the tomatoes out of the water and start peeling its skin from the slits you made on them.
  6. Chop the tomatoes very finely.
  7. Keeping 2 tablespoons of chopped tomatoes away, grind rest of them into a fine puree.
  8. Heat oil in a pan and add garlic. Roast until it starts becoming golden brown.
  9. Add onions, capsicum and 2 tablespoons tomatoes which we kept aside.
  10. Saute very well on a medium heat for about 5 minutes.
  11. Add tomato puree, salt and sugar. Mix well and cook on a medium heat for 30 minutes, stirring every now and then.
  12. Now the mixture would have become a little darker.
  13. Add pepper, basil and other Italian spices.
  14. Add water to adjust the consistency. Do not add more water. It should be saucy
  15. Cover and cook for 2 to 3 minutes. Taste test and add it accordingly.
  16. The sauce is ready. Store in airtight container and use accordingly.
