ABOUT RIPE MANGO CURRY RECIPE

Ripe mango curry is a summer delicacy blends well with the boiled rice.  A popular dish in Mangalore.

Ingredients Serving: 6

  1. Ripe mangoes - 1 kg
  2. Powdered jaggery - 1 1/2 tbspn
  3. Salt - 1/2 tspn
  4. Grind together : -
  5. Grated coconur - 1 1/2 cup
  6. Roasted dried chillies - 3
  7. Mustard seeds - 1tspn
  8. Seasoning : -
  9. Mustard seeds - 1 tspn
  10. Curry Leaves - 1 sprig
  11. 1 tbspn cooking oil

Instructions

  1. Wash the mangoes and peel off the skin. The peel must be squeezed to extract the mango pulp from it. Ultimately discard the peel.
  2. Combine the pulp and the skinned mangoes.
  3. Boil the ground paste adding to it a cup of water.
  4. Allow it to slightly thicken.
  5. Add salt to the gravy and dissolve the jaggery powder in it.
  6. When the gravy is thickened, add the skinned mangoes with the pulp into it.
  7. Allow it to simmer on a low fire for a while.
  8. Add the seasoning of spluttered mustard seeds and curry leaves in oil.
  9. Serve the mango curry with boiled rice.
