Chicken chaap is a very famous dish in kolkata .In any reknowed mughlai restaurants in kolkata you found this lip smacking chicken chaap..It is a rich and spicy mughlai dish..chicken chaap is unique for its distinct flavour and texture...Nowdays we all are health conscious but i must say only for a one time you should try chicken chaap .its absolutely a bliss..I have here made restaurant style chicken chaap

Ingredients Serving: 4

  1. Chicken big pieces of leg and breast - 1 kg
  2. Onion paste of 2 medium size onion
  3. Ginger+garlic paste - 1 1/2 tbsp
  4. Curd - 6-7 bsp
  5. Grated mawa or milk powder- 2 1/2 tbsp
  6. turmeric powder- 1tsp
  7. Chili powder- 1tsp
  8. Cumin Powder- 1tsp
  9. Coriander powder- 1tsp
  10. Poppy seeds- 1 tbsp
  11. Cashew nuts / Kaju - 8-10
  12. Magaz/ melon seeds - 1tbsp
  13. Sattu or roasted besan - 3tbsp
  14. Rose Water- 2 tsp
  15. Kewra water- 1tsp
  16. Chaap masla - 1 and 1/2 tbsp
  17. Salt as required
  18. sugar - 1tsp
  19. Ingredients of chaap masla
  20. Green cardamom- 4
  21. Black cardamom- 2
  22. Cinnamon stick - 1 inch stick
  23. Cloves- 5
  24. Mace / javitri- 1/2 tsp
  25. Jaifol / nutmeg - 1/2 tsp
  26. Caraway seeds - 1tsp
  27. Black pepper- 1tsp
  28. White pepper- 1tsp
  29. Kabab chini - 7-8
  30. cumin seeds- 1tsp
  31. Coriander seeds- 1tsp

Instructions

  1. Wash chicken properly and dry it..
  2. Soak poppy seeds,cashew nuts and melon in a warm Water for 30 mins..then put in a blender and blend till smooth..
  3. Take all chaap masla ingredients in a grinder and grind till powder..
  4. Now a take a bowl..add poppy seeds +cashew +melon seeds paste ,curd , Onion paste,ginger garlic paste, salt to taste,Sugar, Turmeric ,chili,Cumin ,Coriander powder,Chaap masala , sattu or roasted besan ,grated mawa or milk powder rose water and kewra water...
  5. Mix all Ingredients till smooth .then add chicken pieces and marinate with masala very well..
  6. Keep the marinated chicken in a fridge for overnight..
  7. Then heat a broad pan with 3 tbsp ghee and 1tbsp oil.
  8. Now put the marinated chicken inside the pan along with marination.
  9. Cook on low-medium heat chicken chaap for 15 -20 mins or till chicken cooked well and ghee leaves the side of the pan..
  10. Stirring in between the time to prevent the gravy stick to the bottom of the pan.
  11. Check seasoning... gravy should be little dry and oily..
  12. Ready restaurant style chicken chaap for serving...serve chicken chaap with naan / Roti/ paratha or whatever you like..
