ABOUT Vegetable Fried Rice RECIPE

One pot meal for weekends or when you don't want to cook so many dishes, go for this healthy and easy fried rice.

Ingredients Serving: 4

  1. Rice - 2 Cups
  2. Whole garam masala : Bay leaf - 1
  3. Cloves - 4
  4. Cardamom - 2
  5. Cinnamon stick - 1 inch
  6. Whole jeera - 1/4 tsp
  7. Vegetables - ( carrot 1, French beans 8, beetroot 1, green peas 1/4 cup )
  8. Onion - 1 chopped
  9. Ginger paste - 1/2 tsp
  10. Garlic pods - 4 minced
  11. Coriander powder - 1 tsp
  12. Curry powder - 1 tsp
  13. Garam masala powder - 1 tsp
  14. Ghee - 1 tsp
  15. Oil - 2 tsp
  16. Kashmiri chilli powder - 1 tsp
  17. Turmeric powder -1/2 tsp
  18. Cashew nuts - 8
  19. Raisins - 10

Instructions

  1. If using fresh rice then spread the cooked rice in a big plate and make sure it is not soft or overcooked.
  2. In a pan boil 1 1/2 cup of water with salt and a pinch of turmeric powder. Put all the vegetables in this water and cook covered for 6-7 mins on medium heat
  3. Strain all the vegetables, don't throw the water, keep aside.
  4. In a nonstick pan heat oil and ghee and add all the ingredients written under whole 'garam masala' . Also add cashew nuts and raisins. Saute for 2-3 minutes.
  5. Next add chopped onion and saute until brown. Add ginger and garlic and saute for a minute then add add dry powders, turmeric, coriander, cumin, chilli. Saute again for a minute.
  6. Now add boiled vegetables and capsicum slices, saute for 2-3 minutes. Add rice and salt. Mix well.
  7. Now add 3-4 tbsp of vegetable stock. It will give a nice colour to the rice.
  8. Stir turn off the gas. Add garam masala.
  9. Garnish with chopped coriander leaves. Serve hot with raita and papad.
