Cinco De Mayo is a Mexican holiday which is celebrated with Tacos. We are celebrating this in my family with Rajma Chilli a protein packed dish

Ingredients Serving: 4

  1. 2 cups Rajma soaked overnight
  2. 1 cup chopped onions
  3. 1 big green Chilli chopped
  4. 2 cups chopped bell peppers
  5. 2-3 spoons dried mixed Italian herbs such as thyme, rosemary & oregano
  6. 3 spoons olive oil
  7. I cup tortilla chips
  8. Chopped lime
  9. 3 cloves garlic
  10. 2 Dried red chillies

Instructions

  1. Soak Rajma overnight and pressure cook it.
  2. In a pan sauté onions when translucent add tomato and bell peppers
  3. Grind garlic and red Chilli and add to this
  4. When this cooks add water and rajma
  5. Add the herbs and salt to taste
  6. Serve with lime and tortilla chips
