Ingredients Serving: 2
Whole Moth dal 1 cup
Chopped onion 1
Tomatoes 3 (puree)
Ghee 2 tablespoon
Red chilli powder 1 tea spoon
Coriander powder 1 tea spoon
Cumin seeds 1/2 tea spoon
Khatta masala( amchur, mirch, salt ) 1 &1/2 tea spoon
Fennel powder 1/4 tea spoon
Garam masala 1/2 tea spoon
1 &1/2 -2 glass water
Boiled rice 1 cup
1/2 tea spoon turmeric
Pinch of Kasuri methi
Salt to taste
Coriander for garnishing
For Kachori:
Maida 1 cup
Melted ghee 2 tablespoon
Ajwain 1/4 spoon
A pinch of cooking soda
Oil for frying
For filling masala - 1 tsp fennel, 1tsp cumin seeds 1/2 tsp ajwain, red chilli powder
Salt to taste
Instructions
Soak the beans in water for 5-6 hours
After 5-6 hours put the beans in cooker and add water and salt to it
After 1-2 whistles, cook it for 15 minutes on a low flame. keep it aside
Take a pan and add ghee, cumin seeds, fennel seed powder and coriander powder to it
Add onions once they become golden brown add tomato puree in it.
Add red chilli powder
Add the boiled dal and cook for 5-7 minutes on a low flame
Add garam masala powder , Khatta masala and Kasuri methi
Cook it for 5 minutes and the Dal Moth is ready
Take the boiled rice and make it in two parts
Let one part remain as it is and in the other portion the rice is put in a wok and Add ghee in it. Add some cumin seeds and turmeric powder so that the rice gets a yellow colour
Take a layer of white rice and put some masala onions
Next, comes the Moth curry
Above the delicious curry are the yellow rice and again put some curry followed by a layer of white rice
Sprinkle some Khatta masala for taste
Garnish with onions and green chilli
For Kachori:
In a bowl put maida, ghee, Ajwain and soda
Prepare a dough with luke warm water and keep it aside covered with a muslin cloth for half an hour
Prepare some masala with fennel, cumin seeds and ajwain, red chillies roast it and grind it
Now roll the maida and fill some masala and salt
Roll it in the shape of kachori
Heat the oil and fry the kachoris on low flame
Serve the mouth watering Moth Chawal kachori as you like
Serve with exotic Jaljeera and salad
