Ingredients Serving: 6

  1. 1 katori whole motth dal
  2. 1 chopped onion
  3. 3 tomatoes (pury)
  4. 2 tablespoon ghee
  5. 1 teaspoon red chilli powder
  6. 1 teaspoon coriander powder
  7. 12 teaspoon cumin seeds
  8. 1-12 teaspoon Khatta masala (amchoor + degi mirch +salt)
  9. 14 teaspoon fennel powder
  10. 12 teaspoon garam masala
  11. 1-2 glasses water
  12. 1 katori boiled rice
  13. 12 teaspoon turmeric
  14. A pinch of kasoori methi
  15. Salt to taste
  16. Coriander for garnishing
  17. For Kachori- 1 katori maida
  18. 2 tablespoon melted ghee
  19. 14 spoon ajwain
  20. 1 tablespoon curd
  21. A pinch of meetha soda
  22. Lukewarm water for dough
  23. Oil for frying

Instructions

  1. soak the mat beans in water for 5-6 hours. put the beans in a cooker.Add water and salt .
  2. After 1-2 whistles cook it for 15 minutes in a low flame
  3. Take ghee in a wok and add cumin seeds, fennel seed powder and coriander powder
  4. Add onions once they become golden brown add tomato pury in it
  5. Add red chilli powder and boiled motth dal in the wok
  6. cook for 5-7 minutes on a low flame
  7. Add garam masala powder,Khatta masala and kasoori methi
  8. cook for 5 minutes Dal motth is ready
  9. Take the boiled rice and separate it in two parts
  10. one part of rice remain as it is .In the other portion, the rice is put in a wok
  11. Add ghee in it and add some cumin seeds and turmeric powder so that the rice get a yellow colour.
  12. For kachori-
  13. In a bowl ,put Maida ,ghee or oil, ajwain and meetha soda
  14. prepare a dough by using lukewarm water
  15. leep it aside for half an hour covered with a muslin cloth
  16. Heat oil and fry all the Kachoris on a low flame
  17. Now , serve the mouth watering Motth chawal in layers with crispy kachori
  18. First take a layer of white rice and sprinkle some khatta masala
  19. Next comes the lal motth curry
  20. Above the delicious curry are the yellow rice
  21. Again put some lal motth curry followed by a layer of white rice.Sprinkle some khatta masala
  22. Garnish the dish with onions and green chillies
  23. serve with delicious kachoris and exotic Jaljeera
