ABOUT Millet Khichdi RECIPE

Traditional Rajasthani Bajra khichdi. Especially eaten in winters. Tasty good with green chutney.

Ingredients Serving: 4

  1. Millet 1 cup
  2. Moth lentil 1/2 cup
  3. Desi ghee 4 tablespoons
  4. salt as per taste
  5. Water 3 glasses
  6. For serving-
  7. Buttermilk
  8. Green chutney

Instructions

  1. Soak moth lentils for 30 minutes.
  2. Clean the millet and crack and remove its husk. Keep aside.
  3. Take a vessel add 3 glasses of water and let it heat on gas.
  4. Strain moth lentils from the water.
  5. When water boils, add soaked moth lentils without water.
  6. Add salt at this time.
  7. Stir occasionally.
  8. When moth lentils cooked half way add cracked millet.
  9. Add only 2 teaspoons of cracked millet at one time.
  10. Add millet slowly in hot water.
  11. Add millet from one hand and stir khichdi from another hand.
  12. Keep the flame on high.
  13. Don't give any break to stir.
  14. Do this process till millet ends.
  15. Stir continuously again and again otherwise lumps will appear.
  16. Cook on medium flame.
  17. When millet mixes well, cover the khichdi with a plate by slowing down the flame.
  18. Open in the middle and keep stirring.
  19. Turn off the gas when it becomes thicker.
  20. Serve hot millet khichdi with lots of ghee.
  21. Serve with buttermilk and green chutney.
  22. This is very healthy in winters.
