Ingredients Serving: 6

  1. Oregano / Karpooravali leaves – 15 – 20
  2. Besan (chickpea flour) – 1 cup
  3. Rice flour – 1/2 cup
  4. Chilli powder – 1 tsp
  5. Asafoetida (Hing) a pinch
  6. Baking soda – a pinch (optional)
  7. Oil for frying
  8. Salt to taste

Instructions

  1. Use freshly plucked leaves. Wash under running water.
  2. In a bowl mix besan flour, rice flour, salt, chilli powder,asafoetida and mix well. If using baking soda add at this stage.
  3. Add required water to make batter to bajji batter consistency.
  4. Heat oil in a kadai , dip each leaf in the batter and fry till golden brown.
  5. Aromatic fritters is ready to serve.

ragdoll hit I recently tried Aromatic Fritters, also known as Omavalli Bajji or Cuban Oregano Fritters, and they were an absolute delight! These fritters combine the robust, herby flavor of Cuban oregano with a crispy, golden batter, resulting in a snack that is both fragrant and satisfying.
