Ingredients Serving: 5

  1. For the Gram flour and curd kadhi-
  2. Gram flour 1 cup
  3. Sour Curd 400 ml
  4. Water to make batter 1 litre or as per requirement
  5. Ginger garlic paste 1/2 teaspoon
  6. Turmeric powder 1/2 teaspoon
  7. Red Chilli powder 1 teaspoon or to taste
  8. Green chillies slit 1 or 2
  9. Coriander powder 1/2 teaspoon
  10. Salt 1teaspoon or to taste
  11. Ghee/ oil 2 tablespoon
  12. Small mustard 1 teaspoon
  13. Fenugreek seeds (methi daana) 1/2 teaspoon
  14. Asafoetida 1/8 teaspoon
  15. Nigella seeds (onion seeds) 1/4 teaspoon
  16. For the fritters-
  17. Gram flour 1 cup
  18. Onion 1 cut into thin slices
  19. Mixed vegetables cut into thin slices 1 cup(okra, potato, brinjal)
  20. Turmeric powder 1/4 teaspoon
  21. Red chilli powder 1/2 teaspoon or to taste
  22. Jeera powder 1/2 teaspoon
  23. Salt to taste
  24. Asafoetida a pinch
  25. Cooking soda 1/4 teaspoon
  26. Water as per requirement for making thick fritter batter
  27. Oil for shallow frying fritters

Instructions

  1. Take a big deep bowl add in curd whisk nicely we need a smooth curd.
  2. Add in salt and gram flour and whisk nicely so that there should not be any lumps.
  3. Add water little by little and whisk in between to make a lump free batter.
  4. Now add all the water in the gram flour batter.
  5. Now heat oil /ghee in a kadhai add in mustard seeds, nigella seeds, fenugreek seeds, asafoetida, red chilli break into two and add to the tadka.
  6. Meanwhile take 2 table spoon water in a small bowl add in turmeric powder, chilli powder, coriander powder, ginger garlic paste mix quickly.
  7. Pour this ginger garlic masala into the oil.
  8. Cook for a while till oil start separating from masala now pour gram flour and curd mixture and stir with cooking spoon.
  9. Cook for 3-4 min on high flame and adjust the water according to your requirement.
  10. Stir in between so that it should not stick to the bottom.
  11. Cover the lid and allow to cook in medium flame for 20-25 minutes.
  12. Meantime do preparations for fritters-
  13. Heat oil in a kadhai for frying fritters keep it on a low flame.
  14. Meantime Take a bowl add in all the ingredients except vegetables and onion slices.
  15. Add water little by little to make a thick batter whisk nicely to incorporate air by doing this fritters will be fluffy and soft from inside and crispy from outside.
  16. Now add in mix vegetable slices and onion slices mix lightly with spoon.
  17. Increase the flame of oil in a kadhai.
  18. When oil in a kadhai reaches perfect temperature, check by adding little batter when this batter comes up quickly that means oil is ready for frying.
  19. With the help of spoon start adding batter into the kadhai.
  20. Fry all the fritters from both the sides to golden brown.
  21. Add these ready fritters in gram flour and curd batter and allow to cook for another 4-5 minutes
  22. Keep few fritters to add in at the time of serving.
  23. Now your tasty and yummy mix vegetables fritters kadhai is ready to serve with rice.
