ABOUT Dalma RECIPE

Dalma is a traditional Oriya delicacy cooked especially on pooja days as it is a no onion, no garlic dish. It is also a power packed dish as it is cooked with loads and loads of vegetables.

Ingredients Serving: 4

  1. Split red lentil 1 cup
  2. Pumpkin 1/4 cup chopped
  3. Potato 1 medium chopped
  4. Brinjal 1 medium chopped
  5. Colocassia 2 small chopped
  6. Raw banana 1/4 cup chopped
  7. Carrot 1/4 cup chopped
  8. Raw papaya 1/4 cup chopped
  9. Tomatoes 1 cup chopped
  10. Turmeric powder 1/2 teaspoon
  11. Green chillies 2 slit into half
  12. Salt as per your taste
  13. For making a coarse powder:
  14. Dry red chillies 2
  15. Cumin seeds 1 tablespoon
  16. For tempering:
  17. Bay leaves 1
  18. Panch phoran 2 teaspoon
  19. Dry red chillies 2
  20. Grated ginger 1 teaspoon
  21. Asafoetida a generous pinch
  22. Oil 1 tablespoon
  23. Water 3 cups

Instructions

  1. In a pressure cooker take split red gram and all other vegetables along with water and pressure cook for 3 whistles
  2. Dry roast red chillies and cumin seeds
  3. On cooling make a coarse powder it in a mortar and pestle
  4. Take a pan and heat oil in it
  5. Now add bay leaves, dry red chillies ,asafoetida, ginger and panch phoran.
  6. When the panch phoran splutters transfer the pressure cooked lentil and vegetable mix into it and let simmer for 10 minutes.
  7. When the dalma reaches your desired consistency switch off the gas and add the cumin and chilli powder to it.
  8. Serve hot with ghee rice
