ABOUT Spicy Bajra Loaf RECIPE

A Desi dish from Gujarat. It's made from steamed spicy bajra flour with spices, ghee and thick buttermilk or curd. It is a winter special and regular dish in my kitchen.

Ingredients Serving: 4

  1. 1 big bowl - Bajra flour
  2. 500gm - curd
  3. 2 glasses - water
  4. 50gms - chopped green garlic
  5. 7 to 8 - crushed green chilies
  6. 1/2 cup - chopped coriander leaves
  7. 2 + 2 tbs - ghee
  8. Salt as per your taste
  9. 1/2 tsp - turmeric powder
  10. 1 and 1/2 tsp - Kashmiri red chilli powder
  11. 7 to 8 - curry patta/leaves
  12. 1 tsp - jeera
  13. 1/4 tsp - asafoetida (hing)
  14. For the ganish:
  15. 1tbs - fresh coriander leaves
  16. 1 tbs - some chopped green garlic
  17. 1 tbs - ghee

Instructions

  1. In a bowl, add flour and 2 tbs ghee then mix well. Keep it aside.
  2. Now take another bowl, add curd with 1 and 1/2 glass of water and make butter milk .
  3. Take a kadai, add ghee and let it simmer then add jeera powder. Once it crackles then add asafoetida (hing) and curry patta/leaves.
  4. Add turmeric powder, crushed green chilies and chopped garlic then saute it for 2 minutes.
  5. Now add the buttermilk and keep stirring it continuously for 5 minutes.
  6. Add salt, red chilli powder and chopped coriander leaves. Keep boiling it on a slow flame.
  7. Now add the flour into the kadai little by little. Stir well and make sure there are no lumps in the mixture.
  8. Keep stirring, then put the lid on it and cook for 10 to 15 minutes approx.
  9. Once you get a spicy loaf mixture, remove it from the flame.
  10. Serve it hot with extra ghee, also sprinkle some more coriander leaves and some chopped green garlic.
