Ingredients Serving: 5

  1. Curd- 1/2 ltr
  2. Rice, turdal, channadal, urad dal each one spoon. Soaked for 20 min
  3. Green chilies- 6
  4. Fresh grated coconut - 1/4 shell
  5. Ginger- 1/4 inch
  6. Salt as per taste
  7. Turmeric powder- a pinch
  8. Water- 1 glass
  9. Mustard seeds- 1/4 tsp
  10. Fenugreek seeds- 4 tsp
  11. Grated ash gourd- 50 gms
  12. Besan- 1 cup
  13. Red chili powder- 1/2 tsp
  14. Oil for frying the pakoras
  15. Curry leaves- 4 stems
  16. Finely chopped coriander- 1 small bunch
  17. Lady's finger- 8 cut into 2
  18. Bottle gourd- 1/4 cut into small bites
  19. Onion- 1- sliced into lengthwise
  20. Tomato- 1 chopped.

Instructions

  1. Grind the soaked dals and rice along with coconut, green chilies and ginger to make a fine paste.
  2. Mix the grated ash gourd with besan/ channa dal powder, salt and red chili powder and mix well with the water released from ash gourd.
  3. Make small pakoras with it and drop them in oil to make pakoras and fry them golden brown.
  4. Churn the curd adding water properly, add the ground paste along with turmeric powder and salt and churn well without any lumps.
  5. Heat 2 tsp of oil in a thick bottomed vessel. When heated add mustard, fenugreek when it crackles add sliced onion and saute till translucent.
  6. Now add chopped tomato and saute for a while, then add lady's finger, bottle gourd and salt and cook with covered lid till the veggies are done.
  7. Now add the churned curd mix and simmer the flame
  8. Cook till you see bubbles over the curry and turn off the flame.
  9. Garnish with curry leaves and coriander
  10. Add the ash gourds pakoras/ purugulu before serving.
