Quinoa salad with cucumber, onion and simple salad dressing

Ingredients Serving: 3

  1. 1 cup quinoa
  2. 1 cucumber chopped
  3. 1/2 red onion chopped
  4. 1/2 red bell pepper cooked
  5. 1/4 cup low fat feta cheese
  6. 1/8 cup olive oil
  7. Salt and pepper as per taste
  8. 2 tbsp balsamic vinegar
  9. 2 tbsp lemon juice
  10. Chopped coriander for garnish

Instructions

  1. Cook 1 cup quinoa in about 2 cups of water till it's completely cooked. Set it aside
  2. Add all chopped vegetables in a bowl and add cooked quinoa
  3. Make dressing by adding olive oil, lemon juice, balsamic vinegar, salt and pepper. Mix it well in a separate bowl.
  4. Add dressing to quinoa and vegetable mixture. Add coriander and mix well. Let it sit for 10-15 minutes to get all flavors
