Ingredients Serving: 4

  1. Basmati Rice 1/2 kg
  2. Chicken 500 grms
  3. Onions 4 to 5 sliced
  4. Almonds hand full soaked overnight
  5. Green chillies 5 to 6
  6. Dhania handful chopped
  7. Pudina hand full
  8. Ginger garlic paste 2 tbsp
  9. Curd 1 cup (prefer hung curd)
  10. Salt to taste
  11. Oil/pure ghee
  12. Garnish
  13. Few olives
  14. Cherry tomatoes
  15. Basil leaves

Instructions

  1. FOR ALMONDS:
  2. CURD: Put in muslin cloth and remove the whey
  3. CHICKEN: Prefer chicken with bones.
  4. Marinate the chicken over night with salt, ginger garlic paste, pepper powder, green chillies, dhania and pudina
  5. FOR RICE: Cook rice as normal (do not over cook or make them very soft)
  6. GRAVY: Take oil and fry the onions till light pink
  7. Remove and grind into a fine paste (do not add water)
  8. Now take the same oil add whole garam masala- Cinnamon, tej patta, laung and Pepper.
  9. Can add green chillies if you want more spicy
  10. Add the onion paste and hung curd.
  11. Add the chicken and let it cook.
  12. If you feel the gravy is too thick add the whey
  13. Add salt and let the curd & chicken cook (till the raw smell disappears and chicken is cooked)
  14. Lastly add the almond powder/paste
  15. GARNISH: Put rice in a plate and put the gravy on top.
  16. Add greens (dhania, pudina) if you wish
  17. Decorate with olives, cherry tomatoes and basil leaves
  18. I have added some stir fried baby corn as well
