Vegetable semia upma
Wash and cut the vegetables
Cut ginger, green chillies and cashew into small pieces
Cut the onions and keep it aside
Now take a pan and add 2 tsp of oil
Add mustard seeds, chana dal and urad dal to it
When mustard crackles and dals turn golden brown add onions and saute it till onions become transparent
Now add green chillies and ginger and saute it for a minute
Then add cashew to it
Now add finely chopped curry leaves
Saute it for a minute. Then add all the cut vegetables
Add water and required amount of salt.
Let it cook
Once the vegetables become soft ads roasted semia to it
Saute it. Let it cook completely
Once it's cooked add finely chopped coriander leaves
Mix well
Vegetable semia upma is ready to eat
Serve with pickle
Or serve with coconut chutney
