Wash and chop all vegetables as per the size preferred.
Do remember, smaller size will get cooked quickly.
Heat oil in a very heavy aluminum vessel.
It will need to be stirred continuously so that besan does not burn.
With continuos stirring, the colour will keep on changing.
Cover it partially with a lid and cook till the vegetables are cooked.
This can take about 25 to 30 minutes.
Lastly add 1 to 2 teaspoon of tamarind paste.
Give one boil and cover with lid.
Let stand for 5 minutes before serving with boiled white rice.
