ABOUT Puran poli RECIPE

Puran poli is a all time favourite sweet. Soft, ghee smeared Puranpoli dunking in milk or katachi amti ( katachi amti is a maharashtrian speacial curry) and eat is a complete bliss. Here I have shown the recipe with video steps. My first video recipe, thrilled. :)

Ingredients Serving: 8

  1. For Dough :-
  2. 1 and 1/2 cup all purpose flour and 1 and 1/2 cups wheat flour ( or u can directly take 3 cups of wheat flour and no Maida -sometimes I do like that)
  3. Oil 1/4 cup
  4. Salt a pinch
  5. Water as requied
  6. For Puran ( sweet stuffing ) :-
  7. 2 cups Chana dal ( split gram dal )
  8. 2 cups Jaggery
  9. cardamom powder 1 tsp
  10. Nutmeg powder 1/4 tsp (optional)

Instructions

  1. Dough preparation :- Gather all ingredients except water listed under For a dough in a plate.
  2. Add water little by little, knead nicely to form a dough. Knead as much as u can. It will give a smooth texture to puranpolis. Dough should not be too stiff or too much soft.
  3. Keep the dough in a bowl, cover with a lid and keep aside.
  4. Preparing Puran :-
  5. Wash chana dal and boil it in a vessel with good amount of water.
  6. Dal should cook well, but dont overcook it.
  7. Just keep a watch on it. Take a dal in a plate. Smash it by finger. If it not get smashed means u have to cook more. As soon as u see its getting smashed by finger, immediately turn of the gas. ( pl see the video below for this step )
  8. Drain all the water from dal. ( Maharashtians prepares Katachi Amti- a spl curry from this water.)
  9. Add jaggery to chana dal and heat the mixture. Jaggery will start to melt. Keep stirring.
  10. Stir till all the liquid evaporates. When u see the mixture gets drying add cardamom and nutmeg powder. Put a ladle straight into mixture and check whether it falls or not. If ladle is firm and not falling means mixture is ready enough to grind.

  12. Put mixture in mixer and grind to make a puran.

  16. The dough we prepared, knead a little again. Take little dough out of it, make a ball.
  17. Dust the ball in Maida and make a deep bowl from it.
  18. Fill the puran ( puran at least double of ball size ) in bowl and seal it. (Plz see the video )
  19. Take stuffed ball in both hands and lightly rotate it. This will help to stick the puran to its cover. See video :-
  20. Dust into flour and start to roll puranpoli with light hand. Roll the rolling pin only once and rotate . Repeat the process and roll. ( plz see video )

  22. Roll puranpoli as shown above and roll it thin from all edges.
  23. Place puran poli on tawa. ( U can wind puranpoli on rolling pin and by rewinding that rolling pin on tawa u can place puranpoli ,) But Here I have put it directly on tawa.
  24. When fry little flip it and fry poli well from both the sides till golden colour.

  27. Serve hot.
