ABOUT Mughlai Dryfruit Paratha RECIPE

This Special Paratha is Mughlai for its white flour knead with egg,milk sugar and salt.Its well massaged with ghee and no water used to knead it.This soft dough is stuffed with a mix of powdered sugar dry fruits raisins and little semolina all roasted.Its a speciality served with Fish& mutton currys

Ingredients Serving: 2

  1. 1 small bowl white flour/maida
  2. Half a bowl wheat flour
  3. 1 egg
  4. 1 tspn sugar
  5. 1 tblspn ghee
  6. A pinch of salt
  7. 1 tblspn powdered sugar
  8. 1 tblspn semolina roasted
  9. 1 tspn dry coconut finely grated
  10. 1tspn coarse crush of almond and cashew
  11. Few raisins
  12. 2-3 tblspn oil to shallow fry parathas

Instructions

  1. Mix both white flour and wheat flour,keep sum flour for dusting
  2. Add sugar,salt,egg and mix folding well with spatula
  3. Now add sum ghee and form a firm dough
  4. Mix well
  5. Make the mix of stuffing now with roasting semolina and add a crush of almond,+ grated coconut and cashews with the raisins.
  6. Make four portions of the dough and start filling these with the dry stuffing
  7. Fold close in palm well
  8. Fold in the paratha the shape into triangle
  9. Roll out and start Roasting on hot Tava with some oil greasing both sides till done
  10. Serve as is or with your favourite curry cutting out triangles further
