My take on Karnataka’s special ‘Akki Roti’!A slight twist in the traditional recipe makes it more interesting.Inclusion of fresh green garlic leaves and oats enhances its flavor and health quotient.Original recipe uses rice flour as the main ingredient,but I have used soaked and grounded rice. This variation of akki roti tastes amazing with a fine crisp texture…A good option for breakfast or lunch or for Sunday brunch..Green coriander chutney goes well with this…

Ingredients Serving: 6

  1. Raw Rice - 1 cup, soaked in water for 2 hrs
  2. Oats - 1\2 cup, coarsely powdered
  3. Carrot - 1\2 cup, grated
  4. Green Garlic Leaves - 1\2 cup, finely chopped
  5. Onion - 1, medium sized, finely chopped
  6. Green Chilly - 1 or 2(as per taste), finely chopped
  7. Fresh Coriander Leaves - 1\4 cup, finely chopped
  8. Ground Nut - 1\4 cup, roasted and coarsely powdered
  9. Jeera Powder - 1\4 tsp
  10. Salt to taste
  11. Oil as required to toast\roast

Instructions

  1. Soak raw rice for 2 hrs. Grind it into thick fine paste using very little amount of water.
  2. Add coarsely powdered oats, grated carrot, finely chopped green garlic leaves, onion, green chillies, fresh coriander, coarsely powdered groundnut, jeera powder and salt to the grounded paste.
  3. Add little amount of water if required and knead it into smooth dough.
  4. Take lemon sized dough and tap it over a greased banana leaf or a butter sheet.
  5. Spread the roti as thin as possible. Take care to avoid cracks in roti while spreading.
  6. Flip the banana leaf with roti over the hot griddle or tava.
  7. Gently take out the banana leaf from the griddle. Keep the flame medium.
  8. Toast the roti on both the sides using a tsp of oil.
  9. Serve it hot with green coriander chutney.
