ABOUT Akki roti / rice parata RECIPE

Akki roti or rice parata is a famous dish of North Karnataka state. A crispy vegetable gluten free flat bread which is easy to make and very hearty. This roti contains lots of vegetables which is healthy and good for kids who hate veges.

Ingredients Serving: 6

  1. 2 cups rice flour
  2. 1 tsp cumin seeds
  3. 2 Medium Onions, Finely chopped
  4. 3 or 4 green chilli, finely chopped
  5. 1 carrot, peeled and grated in thin side of grater
  6. 2 Tbsp cucumber grated (optional)
  7. 3 tbsp finely chopped coriander leaves
  8. 1 Tbsp finely chopped curry leaves
  9. Salt for taste
  10. Water to make dough
  11. Vegetable oil for cooking roti

Instructions

  1. In a bowl add flour, cumin seeds, onion, grated cucumber, grated carrot, coriander leaves, curry leaves, green chilli, salt and mix well.
  2. Add water little by little and make a dough of it. (Don't make the dough dry). Keep aside.
  3. Now take a clean banana leaf, grease oil on it, take a ball size of dough and place it on leaf, grease your hand with oil and pat it into thin flat roti by using your fingers. ( if no banana leaf you can use baking paper or a aluminum foil. I used aluminum foil for this). Use your creativity and can make any shape for kids.
  4. Heat tava, now place roti on it wait for 30 seconds then you can easily remove banana leaf (or foil or baking paper.)
  5. Now apply oil or ghee to roti and roast it well on both sides.
  6. Now make roti with rest dough. Rotis ready, serve it plain or with chutney.

I like to have it with green chutney.
