ABOUT #Methi dhebra RECIPE

A delicacy from gujarat made up of bajra flour, wheat flour and methi leaves. Can be prepared both ways deep fried or shallow fried. Served with tangy potato curry and chutney.

Ingredients Serving: 8

  1. Bajra flour 1 cup
  2. Whole Wheat Flour 1 cup
  3. semolina 1/4 cup
  4. Methi leaves 1 cup
  5. Sour curd 1/2 cup
  6. Salt 1 tesp
  7. Red chilli powder 1/2 tesp
  8. Turmeric powder 1/2 tesp
  9. Cumin Seeds 1 tesp
  10. Sesame seeds 1 tesp
  11. Chopped green chilies 1 tesp
  12. Grated ginger 1 tbsp
  13. Water as needed
  14. Oil for Deep frying

Instructions

  1. In a mixing bowl mix all the ingredients well except oil.
  2. Knead into a tight dough using water as needed. Add little water at a time.
  3. Rest the dough for 30 minutes.
  4. Pinch 1+1/2 inches balls from the dough. Makes around 25 balls.
  5. Heat oil in a wok.
  6. Roll each ball into a flat disc of around 3 inches using a rolling pin dusting with dry flour.
  7. Place in hot oil carefully. Help it to puff by pressing gently with frying spoon.
  8. Fry crisp and golden from both sides.
  9. Remove to kitchen towel and serve with tangy potato curry.
