Rose flavoured sugar coated crisp spirals served with rose phirni, a milk based rice dessert.

Ingredients Serving: 6

  1. For jalebi
  2. All purpose flour 1 cup
  3. Curd 1/2 cup
  4. rose water 3 tbsp
  5. Baking powder 1 tesp
  6. Water as needed
  7. Red food color few drops
  8. Clarified butter/ ghee for deep frying
  9. For sugar syrup
  10. sugar 1 cup
  11. Water 1 cup
  12. Rose water 2 tbsp
  13. For phirni
  14. Milk 1 ltr
  15. rice 1/4 cup
  16. rose water 3 tbsp
  17. Dried rose petals 1 tbsp
  18. chopped nuts for garnishing
  19. Sugar 3/4 cup

Instructions

  1. Wash rice grains well and pat dry in shade for 15 minutes.
  2. Grind rice grains to coarse powder.
  3. Meanwhile boil milk with rose water.
  4. Add powdered rice to milk and cook on low till milk gets creamy , about 20 minutes.
  5. Add sugar and cook till thicken for approx 10 minutes, while stiring constantly.
  6. Add dried rose petals retaining some for garnishing and remove from heat.
  7. Boil together sugar, water and rose water.
  8. Cook on sim for 5 minutes and remove from the heat.
  9. In a mixing bowl mix together flour, curd, rose water and baking powder.
  10. Prepare a thick batter of pouring consistency by adding water as needed.
  11. Add red food color to batter and mix well.
  12. Fill the batter in a sauce dispenser.
  13. Heat ghee (1" deep) in a flat bottomed pan.
  14. Make round jalebis in hot ghee by squeezing bottle.
  15. Cook crisp on both sides.
  16. Drain and drop in sugar syrup.
  17. Then transfer the soaked jalebis in a strainer to drain excess syrup.
  18. Serve hot jalebis with rice phirni with garnishing of chopped nuts and dried rose petals.
