ABOUT JALEBIS RECIPE

Ingredients Serving: 6

  1. FOR THE BATTER
  2. 1 cup maida
  3. 2 tbsp besan
  4. 2 tbsp curd
  5. Pinch of haldi
  6. Pinch of baking powder
  7. Water as required
  8. FOR THE SUGAR SYRUP
  9. 1 cup sugar
  10. 1/2 cup water
  11. 12 - 15 strands of saffron
  12. FOR MAKING THE JALEBI
  13. Take oil or ghee for deep frying

Instructions

  1. In a mixing bowl combine together maida , besan , haldi and curd , mix well
  2. Now by adding water little by little make a smooth batter
  3. The batter should be lump free
  4. And the consistency should be medium thick
  5. Cover and keep it for 7 - 8 hours for fermentation
  6. After fermentation add pinch of baking powder , mix nicely
  7. In the meantime combine sugar and water in a kadai
  8. Add saffron strands
  9. Cook on medium heat until one string consistency
  10. Switch off the gas
  11. Now heat ghee or oil for deep frying , first on high then make the flame medium low
  12. Now fill the batter in a bottle , which has nozzle
  13. Cover the lid and start making the jalebi
  14. Hold the bootle above the hot oil
  15. The nozzle should be facing the oil
  16. Start pressing the bottle from the top , that is the bottom of it
  17. And drop the batter in circular motion , giving it the shape of a jalebi
  18. In this way make 4 - 5 jalebis at one time
  19. Cook them by turning at regular intervals
  20. Cook them until becomes light brown and crispy
  21. In the meantime switch on the gas of sugar syrup
  22. Warm it a little then again switch it off
  23. When done take them out and directly dip in the warm sugar syrup
  24. Dip for a minute and then take them out in a plate
  25. In this way make all the jalebis
  26. Serve hot in a plate
  27. You can serve cold rabdi with hot jalebis
