ABOUT Rohu in spicy tomatoes garlic gravy RECIPE

A typical sindhi cusine, prepared with rohu varaiant of fish. It is prepared using lots of garlic which has a strong flavour in the gravy.

Ingredients Serving: 4

  1. Rohu fish pieces 8-10
  2. Garlic pods(big ones) 2-3
  3. Green chillies 3-4
  4. Oil 1/2 cup
  5. Tomatoes 3-4 riped
  6. salt as per taste
  7. Red chilly powder 1tsp
  8. Turmeric powder 1/4 tsp
  9. Dry coriander powder 1/2 tsp
  10. Cumin seeds 1/2 tsp
  11. Coriander leaves finely chopped
  12. Marinade
  13. Vinegar 2 tsp
  14. Turmeric 1/2 tsp
  15. Salt 1/2 tsp

Instructions

  1. 1 Throughly wash and clean fish pieces, and add all the marinade ingredients, keep aside for 15 minutes.
  2. 2 Till then peel the garlic and finely grind it with green chillies to make a paste.
  3. 3 Also make paste of tomatoes.
  4. 4 Again wash the fish with fresh water( this step helps remove pungent smell from fish)
  5. 5 Heat oil in pan and slowly from sides add fish to eat and saute for 2-3 minutes until it has just begun to change colour, donot fully cook the fish, remove from the pan.
  6. 6 Now add cumin seeds and garlic green chillies paste and saute for a minute.
  7. 7 Add tomatoes paste and cook on high uncovered for 5-10 minutes stirring occasionally, until the paste has dried all its water and it's good red in colour. At this stage the paste will start leaving oil from sides.
  8. 8 Add salt, turmeric, red chilly and corainder powder and mix well. Sprinkle some water and cook for another 2-3 minutes.
  9. 9 Add the fried fish pieces carefully so that it doesn't break, add half glass of water and let it cook on medium flame covered for 5-7 minutes or until done. ( We can adjust the quantity of water as the thickness of gravy we require).
  10. 10 Serve hot with rice or roti.
