ABOUT Herbed Fish and Rice RECIPE

My recent visit to a famous Restaurant Chilly's in Hyderabad made me to try this flavourful and delicious rice. With the remembrance of taste, tried to replicate the dish which became a huge hit among family members. This recipe is easy to prepare, gives a wonderful aroma while cooking and tastes delicious.

Ingredients Serving: 2

  1. For Herbed Fish :
  2. 2 Basa Fillets
  3. 1 1/2 tsp garlic powder
  4. 2 Tsp Dried Basil leaves
  5. 2 tsp dried Oregano
  6. 1 tsp pepper powder
  7. 1 tsp dried dill leaves
  8. 3 Tbsp Parsley leaves, finely chopped
  9. Salt to taste
  10. 3 tbsp olive oil
  11. For Herbed Rice :
  12. 1 cup Basmati Rice
  13. 2 Cups Water
  14. 1 tbsp olive oil
  15. 1 Tbsp Garlic pods, Finely chopped
  16. 1/2 Tsp Dried Basil leaves
  17. 1/2 tsp Dried Oregano
  18. 1/2 tsp dried dill leaves
  19. 1/2 Tsp Lemon grass powder
  20. 1/4 tsp pepper powder
  21. Salt to taste
  22. 2 - 3 Tbsp Parsley leaves, chopped

Instructions

  1. For Herbed Fish :
  2. Mix all the herbs in a small bowl and add salt followed by olive oil.
  3. Mix well and rub all over the fish fillets.
  4. Marinate it for 30 minutes.
  5. Heat a grill pan, smear oil and grill the marinated fish till it gets cooked.
  6. Brush little olive oil or butter on top of fish while cooking.
  7. Carefully remove the cooked fish from the grill pan and keep aside.
  8. For Herbed Rice :
  9. Wash and soak the basmati rice for 20 minutes.
  10. Heat olive oil in a deep pan and add the chopped garlic pods.
  11. Saute for half a minute and add all the herbs ( basil, oregano, dill and lemon grass powder ) except pepper powder and parsley leaves.
  12. Add the measured amount of water and the required amount of salt.
  13. Once the water starts boiling, drain the water from the rice and add it to the boiling water.
  14. Simmer the flame, cover the pan with a lid or aluminium foil and cook it for 15 - 20 minutes.
  15. Once the rice gets cooked, add pepper powder and parsley to the rice.
  16. Mix gently without breaking the rice and keep it aside for 10 minutes.
  17. Serve hot.
