I feel real bad wasting de green coriander stalks especially when it is a big bunch that you pluck leaves from. So make a yummy green chutney which is a must have for many a sandwich.
Simple coriander chutney has a flavour of its own! very nice...what a lovely fresh green colour...
Pluck as much tender stalk as you can take. Wash, clean and roughly chop green coriander stalks, coriander leaves, mint leaves and put it in a seive to drain excess moisture.
Dry roast de peanuts till crisp and dry. Remove skin and keep aside.
In a mixie jar add peanuts, ginger, garlic, sugar, salt and roughly chopped green chillies, coriander stalks, coriander leaves and mint leaves.
Pulse in the mixer to a fine paste. Water is generally not needed but if difficult to grind you may add one - two tbsps. water.
Lastly add de lime juice and pulse for a few seconds.
SERVING: 6
