ABOUT Besani puri with aalo sabji RECIPE

This is a festive recipe when we all want to have something rich and delicious, a mixed poori made with gram flour and spices, and served along with a spicy potato based curry.

Ingredients Serving: 4

  1. Wheat flour 1/2 katori
  2. Besan 2 katori
  3. oil 1 tbspn
  4. Salt 1/2 tspn
  5. Red chilli powder 1/2 tspn
  6. Hing powder 1/4 tspn
  7. Fresh methi leaves cut 2 tsp.You can use dry methi leaves also.
  8. Turmeric powder 1/4 tspn
  9. For the aaloo sabji:
  10. Potatoes 5-6 cut in cubes
  11. Ghee 1 tbspn
  12. Mustard seeds 1 tspn
  13. Hing powder 1/4 tspn
  14. Jeera 1 tspn
  15. Salt 1 1/2 tspn
  16. Turmeric powder 1/2 tspn
  17. Red chilli powder 1 tsp
  18. Coriander powder 1 tspn
  19. Amchoor powder 1 1/2 tspn
  20. Home made tomato puree of 4-5 tomatoes

Instructions

  1. Mix all the ingredients of the flour . Put 2 tbspns of milk and 1 tbsp of fresh malai .
  2. Add required amount of water and knead a soft dough. Keep it covered for 10 minutes
  3. Divide the dough into equal sized balls and roll into thin puris and deep fry them in hot oil.
  4. For the aaloo Sabji:
  5. Heat some ghee in a pressure cooker , Now put the whole red chilli ,and mustard seeds followed by cumin [jeera] seeds,saute.
  6. Put all the masalas except amchoor powder .Cook
  7. Then put the tomato puree . Saute for 5 minutes.
  8. Add the potatoes mix it very well . Pour required amount of water, & pressure cook till 2 -3 whistles.
  9. Let the pressure drop on its own , open the lid and add the amchoor powder mix
  10. Serve hot with the puri
